Hello friends. How is your week going? We are recovering from our family vacay and sadly, getting ready to start thinking about heading back to school Boo. However, you’ll be happy to know that I have some awesome recipes to share with you today for delicious summer cocktails. Moreover, I’ve tested them out myself and give them all two thumbs up. I don’t know about you, but when it’s hot out, I really do not enjoy drinking red wine. It makes me feel hotter. I want something that is refreshing and delicious. These will give you just that.
These are delicious, but a little on the sweet side. If you love watermelon like I do though, this cocktail is a no-brainer.
1 container (?) of frozen pina colada mix
1 cup grapefruit juice
2 cups of watermelon cubed
1/2 cup of strawberries
1/4 lime juice
1 cup rum (coconut rum would be excellent)
Add all of the ingredients to your blender and go to town. Garnish with lime and watermelon.
I think adding an umbrella straw makes it even better.
This is a simple, wine sangria without a lot of chopping fruit. It’s so easy and light you will be mixing it up all the time. As a side note, adding frozen melon balls or grapes to this would not only make it beautiful, but it cool at the same time without diluting it by ice.
1 bottle of pinot grigio, chilled
1/4 cup Triple Sec or Grand Marnier
3 cups of lemon-lime soda
Mix all ingredients together. Serve over ice or frozen fruit. Garnish with lemon or lime slices.

Coconut Lemongrass Sipper
This is a little more complicated since you have to make a simple syrup; however, I assure you it is well worth your effort.
A simple syrup is made by heating equal parts water and sugar over medium heat. In this case, you want to add lemongrass and basil as the water heats up. You don’t need much, this is just for adding the flavor ~ maybe one stalk lemon grass and a few basil leaves. Allow it to steep for a few minute to infuse the syrup with the lemongrass and basil.
To mix the cocktail add:
the juice of 1/2 a lime
a jigger of vodka (or rum if you prefer)
1/2 jigger of simple syrup mix
2 jiggers coconut milk
You will want to shake the ingredients in a cocktail shaker with ice. Serve in a martini glass and garnish with a lime wedge. For added flair, float a basil leaf on the top.
I can tell you when we mixed these cocktails, the girls kept demanding another. It’s really fantastic!
Watermelon Rum Slush
It doesn’t get any more summer than watermelon. This cocktail is super easy to make, but you have to allow time for it to freeze(ish).
4 cups watermelon juice *
2 cups rum (again, I think coconut rum would be delicious)
1/2 cup simple syrup
Mix all ingredients and allow time to freeze and get slushy. Definitely serve with an umbrella in this drink.
** To make watermelon juice, you will add cubed watermelon to your blender and puree it. When it’s no longer chunky, you will press it through a strainer. This will allow you to remove any of the solid watermelon while the juice goes right through. We had plenty of juice from 1/2 a watermelon.**
