Hi friends! It’s Wednesday and I cannot believe I am actually getting a post done mid-week. This is usually the hardest one to get done because I am struggling to fit it all in. Plus, life is crazy right now. Son #2 just got word that his ship date has been moved up. He leaves this week. So, that means I am trying to squeeze in every spare moment I have with him before he heads to boot camp for nine weeks. Anyway, I thought today I’d just share what’s up in my world. You know, new discoveries, favorites, and maybe a tip or two.
First let me just share my feelings on the impending departure of son #2. I am so proud of him, of course. He is going to do great in the Navy. Yes, I think it is honorable, and he will have so much opportunity to see the world, to get a great education, and to follow his dreams. Still, I am the mama and this is hard. I wish it was somebody else’s son instead of mine. #selfishmom Have any of you ever been through this? I would welcome any words of wisdom on being a military mom.
Next up, I have made a recipe discovery/new favorite. Anytime I actually make a good dinner for the family I feel like I should get an award. I’m not joking. Seriously, work all day, get in a work out, and make dinner? I find that I am more successful at this if I have a plan for the week. Well, last week, I stumbled upon a recipe from Shay Shull at Mix and Match Mama. It was for chicken enchiladas. #youhadmeatenchilada I took her recipe and did a small tweak. The dinner was fantastic and the leftovers were even better. #winning You can find her recipe here, but here’s what I did.
I had Mr. LouiseMarie grill some extra chicken breasts one night so that there would be leftovers. I chopped about 2 large breasts into small chunks and added them to a bowl with a can or Rotel and a can of green chiles (undrained). I also added about 1 1/2 cups of smoked Gouda cheese and 1 cup of cheddar. Next, I chopped up a package of fresh spinach and added that to the bowl with some salt, pepper, and cumin . I stirred it all together with about 1/3 can of enchilada sauce. Once it’s mixed, steam a package of corn tortillas, then spoon the chicken mixture into each one and roll them up and place them seam side down in the pan. I topped them with about another cup of cheese and the remaining enchilada sauce from the can.
I threw it in the oven for about twenty minutes at 350. YUM! I served it with a side of rice and a salad. This was super easy and delish. Thank you to Shay Shull. Trust me…you need to make this.

Well, I stumbled on it reading a beauty blog and thought I’d try it out. Specifically I was looking for the lip contour set.

You can layer the colors, wear one, or create a 3D effect by using the darker shade in the corners and the lighter shade in the center of your lips. Another new fav. is one I made myself. I am loving this happy little chalkboard that is in my dining room. You’ll see more of my fall touches later this week, but here’s a sneak peek.
